The cuisine of Puglia
Puglia is home to the authentic Mediterranean and paesant cuisine (or cucina povera), based on seafood, durum wheat fresh pasta, legumes, lots of vegetables and fruit, very little meat and extra virgin olive oil.
Cooking techniques are simple, but dishes are very delicious because only the best seasonal and local ingredients are used.
It’s a culture where no food is wasted: vegetables are preserved in olive oil, figs and tomatoes are dried for the winter, tomatoes are used to make the passata.
Traditional dishes are made with ancient and unwritten recipes handed down from mother to daughter for centuries and that only locals know.
