		<description>Hello TMS. I am totally with you! we usually pair this &quot;artichoke risotto&quot; either with a white wine (the same one we used to prepare it) or with a rosé (Puglia has excellents ones!).
However, we find it very difficult to have any wine with artichokes when we cook them very &quot;&lt;em&gt;al dente&lt;/em&gt;&quot; or when we have a raw artichoke salad. In these cases, the iron flavor stands out too much....and then we don&#039;t have any wine...just water!</description>
